Mint Chocolate Chip Cookies

The cookies that are changing my life!

Officially called “CHOCOLATE MINT SUGAR COOKIE DROPS”
2 ½ cups all-purpose flour
1 ½ teaspoons baking powder
¾ teaspoon salt
1 ¼ cups sugar (divided)
¾ cup vegetable oil
2 eggs
1 teaspoon vanilla extract
8 drops of red or green food coloring (optional)
1 – 10 oz page (1 ½ cups) Nestle Toll House mint-Flavored Semisweet Chocolate Morsels (or Andes chips)

Preheat oven to 350 F. In a small bowl, combine flour, baking powder and salt; set aside. In large bowl, combine 1 cup sugar and vegetable oil; mix well. Beat in eggs and vanilla extract. If using food coloring, beat it in now. Gradually add flour mixture. Stir in chocolate morsels.  Shape into balls by rounded teaspoonfuls; roll in remaining sugar. Place on ungreased cookie sheet. Bake 8 to 10 minutes. Makes approx 5 ½ dozen cookies.

    I just found your site! Thank you for the link to the green smoothies. We have a daughter getting married (which is why I am looking at these cookies 🙂 , a husband with cancer (CLL), and we love Jesus too. Just wanted to say thank you !

    And good luck with the wedding! My sister just got married this past weekend and my mom and I made a ton of cookies ahead of time and froze them – big hit with everyone!

    (And cancer sucks)
